This African salad is delicious and you can make it quickly with only a few ingredients!
I learned how to make this delicious salad from my husband, who is from Guinea-Conakry (Republic of Guinea). It is a very popular, weekly served dish in the family. And because it contains both vegetables and eggs, it’s very nutritious, so you can have it as a side dish, but also as a main dish!
Ingredients for 2 portions:
- 4 eggs
- 2 tomatoes
- 1-2 cucumbers
- 1 yellow or red onion
- 2 avocado
- (optional) salad leaves
- 1 tablespoon of mayonnaise
- 1 teaspoon of vinegar or the juice from half a lemon.
- 1 Maggy cube
- Salt and pepper to taste
- 2-3 tablespoons of oil
To cook two portions, start by hard-boiling 4 eggs. For this, place the eggs to boil in a pot of water with a teaspoon of salt. Once the water starts bubbling, leave them to boil for 6-7 minutes. When the eggs are done, place them in a bowl of cold water for a few minutes, then peel them.
Now it’s time to put everything together. I will start by cutting the tomatoes and I will remove the seeds, to not make the salad watery. I’m slicing them and add them to the salad bowl.
Peel 1-2 cucumbers and cut them in cubes.
Then peel the onion and cut it in half-moon slices.
Peel the avocado and cut it into slices or bigger cubes.
Cut the eggs in half. I will set the egg yolks aside in a small bowl and I will only use the egg whites in the salad.
For the dressing, I am smashing the egg yolks with a fork, add a tablespoon of mayonnaise, 2 tablespoons of oil, one teaspoon of vinegar or the juice from half a lemon and gently mix everything together. I used sunflower oil, but you can also use other cooking oil of your choice.
I will use a mortar and pestle to break the Maggi cube. I am located in Europe and I bought my Maggi from a local African store. If you don’t have one nearby, use a regular vegetables cube and adjust the quantity to your taste.
Add the Maggi powder, salt and pepper to your dressing and mix everything well.
To serve the salad, mix the ingredients together and add the dressing. If you opted for salad leaves, place the salad leaves on a plate, and add the salad mix on top.
