This sponge cake with sour cherries is a delightful and simple dessert that’s perfect for any occasion. The combination of a soft, moist base and the tangy flavor of sour cherries makes it a favorite treat. Here’s how to make this easy yet irresistible cake.

Ingredients:

  • 8 tablespoons of flour
  • 8 tablespoons of sugar
  • 8 tablespoons of sunflower oil or melted butter
  • 8 eggs
  • 600-800 g pitted sour cherries
  • 10 g baking powder
  • vanilla essence or vanilla sugar
  • a pinch of salt
  • dry orange or lemon zest (optional)
  • powder sugar (optional)

Step 1: Prepare the Sour Cherries

For this desert I’m using frozen pitted sour cherries, that I’m placing in a colander to strain any excess liquid. If you’re using fresh cherries, be sure to remove all the seeds. I’m cutting each cherry in half to ensure no pits remain, then I set the cherries aside while I prepare the batter. You can also try this recipe with other fruits, like apricots, peaches, pears, raspberries or strawberries.

Step 2: Make the Cake Batter

For the batter I will use my regular base for all cakes: 8 tablespoons of sugar, 8 tablespoons of flour, 8 tablespoons of sunflower oil and 8 eggs. Combining equal parts of these ingredients always results in a balanced cake with a moist base.

  1. Combine the dry ingredients: In a large bowl, mix the flour, sugar, and baking powder. This step helps distribute the leavening agent evenly throughout the batter and breaks the flour.
  2. Then add the wet ingredients and from here on we are moving quickly, as they activate the baking powder. Break the 8 eggs into the bowl, add the sunflower oil, and stir. I’m not worried about lumps, as the sugar broke the flower and everything mixes fast.
  3. Add a pinch of salt and a teaspoon of vanilla essence to enhance the flavor.
  4. Once the batter is well-mixed, I pour the batter into a non-stick baking tray, but you can also line a regular tray with baking paper.

Step 3: Add the Sour Cherries

Distribute the sour cherries evenly over the surface of the batter. After the first round, gently push the cherries into the batter using the tail of a fork, then add more cherries on top for an even distribution.

Step 4: Bake the Cake

Bake at low-medium heat until the top turns golden and the cake is set.

Serve and Enjoy

Once the cake is done, remove it from the tray and let it cool. Cut it into squares and serve as is, or dust with powdered sugar for an extra touch of sweetness.
