Rustic potatoes are one of those comfort meals we cook often at home, especially during the colder months. They’re made with basic ingredients, easy to prepare, and packed with flavor. Simple food that feels satisfying every single time!
Ingredients (6 portions)
- 3 kg potatoes
- 500 g kaiser or bacon
- 300 g sausages
- 3 large onions
- Sunflower oil
- Salt, pepper, garlic powder, and sweet paprika, to taste
Optional, for serving:
- Red cabbage
- 2 carrots
- Lemon juice
- Sunflower oil, salt
Preparing the Potatoes
I start by peeling the potatoes and adding them to a pot with one tablespoon of salt and cold water, just enough to cover them. I boil the potatoes until they are fully cooked but still hold their shape, not falling apart.
Once ready, I take them out and set them aside to cool while I prepare the rest of the ingredients.
Cooking the Onion and Meat Mixture
I cut the three large onions into half-moon slices. I add some sunflower oil to a pan and cook the onions until soft and golden.
I cut the kaiser (or bacon) into strips and add it to the pan with the onions. Then I slice the sausages and add them as well. I usually use sweet, dry smoked sausages, but you can easily substitute them with any type you prefer.
Seasoning
I season everything with salt, about one tablespoon. It might seem like a lot, but keep in mind that this mixture will later be combined with the potatoes. If you’re unsure, you can wait and adjust the salt after everything is mixed together.
Then I add pepper, sweet paprika, and garlic powder. Since sausages are often already seasoned, I recommend adjusting the spices accordingly. I cook everything until the ingredients are well coated in spices and any excess moisture has evaporated.
Mixing Everything Together
In a large bowl (or pot), I start cutting the boiled potatoes into large pieces. I don’t cut them too small, because they will also break when I mix them with the other ingredients.
Once the potatoes are cut, I add the onion and meat mixture and gently mix until all the potatoes are evenly coated. If you didn’t add salt earlier, now it’s a good time to give it a taste and add salt and maybe adjust the spices.
Baking the Rustic Potatoes
At this point, everything is technically cooked and can be eaten as is. However, I love rustic potatoes with a bit of texture, so I transfer the mixture to a non-stick baking tray. If you don’t have one, a regular tray lined with baking paper works just as well. I bake the potatoes in the oven until they are lightly crispy on top.
Serving Suggestions
You can serve the potatoes as they are, or with pickles or a fresh salad on the side. I made a simple cabbage salad using red cabbage rubbed with salt, two grated carrots, a bit of sunflower oil, and a splash of lemon juice. It adds a fresh, crunchy contrast to the warm potatoes.
