It’s one of those days when money is running low, but there’s still enough left in the fridge and pantry to put together something warm and comforting. So instead of going shopping, I decided to improvise lunch with what we already had.

I found some sausages in the fridge and started there. I placed them in an oven tray and baked them without adding any oil. Sausages release their own grease while cooking, so they roast nicely on their own.

Turning the Last Potatoes into Oven Fries

While the sausages were in the oven, I peeled and sliced the last potatoes we had, which actually felt well-timed because tomorrow is salary day and the pantry will finally get a refresh.

Originally, I was craving fries, but then an idea came to mind: instead of frying the potatoes in oil, why not cook them in the oven using the flavorful grease left behind by the sausages?

Once the sausages were nicely roasted, I took them out of the tray and added half of the potatoes together with a little water.

If you’ve never cooked raw potatoes in the oven this way, the water makes a big difference. At first, the potatoes gently cook and soften while the water evaporates. After that, they start roasting and develop a golden exterior while becoming tender inside. Without a bit of moisture at the beginning, they can easily end up burned on the outside and undercooked in the middle.

Bringing Everything Back Together

Since the tray wasn’t large enough, I cooked the potatoes in two rounds. When the second batch was ready, I returned everything to the tray and put it back in the oven for another 5–10 minutes so everything would be evenly warm.

Adding the Finishing Touches

Meanwhile, I fried a few eggs in a pan with just a little oil.

Then came the best part: assembling the plates.

I added the potatoes to one side and sprinkled some cheese over them while still hot. On top of the potatoes, I placed two fried eggs for each serving and added a little more cheese. Since the cheese wasn’t very salty, I finished everything with a light sprinkle of salt over the eggs and potatoes. Next to them went the yummy sausages.

And that’s how we ended up with a delicious comfort food lunch on a budget, simply by using what we already had in the fridge.

Sometimes the best meals aren’t planned at all. They come together from a few ingredients, a little creativity, and making good use of what’s already there.
